I always feel like pulling out my slow cooker (aka my crockpot) in the fall, don’t you? Here’s one of my go-to recipes that is so easy and delicious you won’t believe it. There’s nothing quite as yummy as bbq pulled pork!
First off, chop up 1 purple onion and put it in a bowl.
Next add a bunch of yummy (but super simple) ingredients.
1/2 cup ketchup
1/3 cup apple cider vinegar
1/4 cup packed brown sugar
1 small can of tomato paste
2 tablespoons of paprika
2 tablespoons of yellow mustard
1 teaspoons of salt
1 teaspoon of pepper
Mix all of that together with the chopped onion and then slather it all over a 3 – 4 pound boneless pork shoulder (or pork butt).
Stick it all in your slow cooker and let it do its thing for about 10 – 12 hours. Then you just use a pair of tongs, and it will shred without you even having to do much of anything. Looks like this when you’re all done.
So delicious for pulled pork sammies, or just straight out of the slow cooker by the fork full!
