Chili Toppings Bar

My love for my Crock Pot knows no bounds, especially at this time of year.  It’s my favorite way to make a super hearty and yummy chili.  

I just start by browing up about 2.5 lbs of ground beef.

Chopping up 1 whole red onion.

And 2 red bell peppers.  Just put all the chopped veggies and ground meat into the crockpot.

Next, I dump 1 small can of tomato paste, 2 small cans of diced green chilis, 1 can of diced tomatoes, and 2 cans of both kidney and black beans (be sure to rinse and drain the canned beans) into the crock pot with the meat and veggies.

The final ingredients are the spices — 2 teaspoons of salt, 2 teaspoons of ground black pepper, 2 tablespoons of cumin, 1 tablespoon of chili powder.  Of course, adjust the seasonings to your taste.

Just mix it all together, and you get this.

Turn on your crock pot for at least 6 hours — 10 is really the best if you have the time.  For a fun toppings bar, we like sour cream, cheddar cheese, avacado, green onions and tortilla chips.  Delish!
