Quickie Tomato Soup

Here’s one for everyone who thinks making something takes longer than ordering out, or in, as the case may be.  This simple little tomato soup recipe proves you can make a healthy, low-fat and low-cal … and not to mention yummy! … meal in minutes.  Literally.

First you just chop up half a white onion (or any onion you have on hand) and 2 cloves of garlic.  This is the hardest part of the whole recipe.

 

Throw them into a little saute pan with some olive oil.  And wine!   I used about 1 tablespoon of oil and 1/4 cup of wine.  No need to use wine if you don’t want to, but it does add something really yummy to the flavor.  Cook this mixture on medium high heat for about 5 minutes.

  

Take a big can of diced tomatoes, like this.

 

And dump the whole thing  into the pan.

 

There, that was easy, right?  Now, just add a few seasonings.

1 teaspoon of salt, or to taste
1 teaspoon of ground pepper, or to taste
1.5 tablespoons of Italian seasonings
2 teaspoons of dill
1 tablespoon of sugar (this is really important)

Then you take your immersion blender and whiz away until it’s smooth.

 

To top it off, just pour in 1/4 cup half and half (or any milk you have around the house works too) and stir it in.

And there you go — super yummy and easy tomato soup!  It literally takes maybe 15 minutes from start to finish, and it’s so delicious. 

* served with mini grilled cheese sandwiches made with the amazing Udi bread.  Soooo good!
