BBQ Chopped Salad

Move over California Pizza Kitchen, I’m busting out my own healthy homemade version of your BBQ Chicken Chopped Salad.   And it’s gluten-free and uses my simple homemade ranch dressing.  Talk about easy – and yummy! 

Just chop up some iceberg lettuce.

Mix together some thawed frozen corn and a drained and rinsed can of black beans.

Add some shredded mexican cheese and chopped tomatoes.

Don’t forget the fresh cilantro.

It’s really good without chicken, but if want to add some in, just roast it the Ina Garten way (or get one of those rotisserie chickens from the grocery if you’re feeling lazy and chop it up).

Next, no need to buy prepared ranch dressing — it’s so easy to make.  Just take a few simple ingredients.

1/3 cup plain greek yogurt
1/3 cup sour cream
1 tablespoon dried dill
1.5 teaspoons salt
1 teaspoon pepper
2 tablespoons milk
Mix them together and you’re good to go!

Drizzle that on top of the salad as well as some BBQ sauce.  Kraft Original is gluten-free!

And you’ve got one yummy salad!
