Chocolate Chip Meringues

Sometimes the simplest recipes are the best.   I mean, these meringues only have six ingredients and take less than 30 minutes to put together and yet they are divine.   Hardly any fat, super low cal, naturally gluten-free — and best of all yum-o!

First gather all your ingredients:
4 eggs whites
1/2 teaspoon of salt
1 and 1/3 cup white sugar
1/4 teaspoon cream of tartar
1/4 teaspoon vanilla extract
2 cups mini chocolate chips

Just preheat your oven to 350 degrees, line two baking sheets with parchment paper, and you’re on your way.

My mom gave me some awesome glass bowls last Christmas, so I like measuring out all the different ingredients I’ll need in advance.  Makes it so much easier!

Just whiz the egg whites, vanilla, and salt together until soft peaks form.

Next, add the sugar one tablespoon at a time until it’s all incorporated and then add in your cream of tartar and mix until combined.  It looks like marshmallow fluff to me — super sticky and a big ole mess waiting to happen.

And now the fun part — fold in your chocolate chips.  Yummy!

Then you take the sticky goo and glob it into a big ziplock bag.

Cut the corner off to form a simple pastry bag.

And squeeze out your meringues!

This recipe makes a lot.

Once you’ve got them all made, stick them in the oven and immediately turn off the heat and just let them sit in there for about 12 hours.  I checked mine after I let them sit / cook overnight and they weren’t quite crunchy enough for me, so I turned the oven on 215 degrees and cooked them for another hour.   

They are like little crunchy sweet chocolate clouds!

  2. Amy these were great. My 4 year old and i made them and both the 4 year old and the 2 year old love them (not to mention the husband) I didn’t realize how long they took to cook until after we started but they were great this morning when we finally got a chance to taste our creation.
