St. Patrick’s Day Brussel Sprouts

Before you turn your nose up at a brussel sprout recipe, you really oughta give this one a try. It’s really, really good.  And easy.

Take these.

Add these.

And make a dressing out of these.

For the slightly more detailed version…. first, just take half an onion, dice it up and sautee it for about three minutes in some olive oil.  Chop up some sausage into little chunks and heat it through. 

Slice up the brussel sprouts and add them to the pot with 1/2 cup of water.  Sautee together for about 25 minutes.

Add in the bag of craisins and make a simple dressing of 1/4 cup red wine vinegar, 1/8 cup of olive oil, 3 tablespoons of dijon mustard, 2 teaspoons of salt and 1 teaspoon of pepper.  Mix that together and then toss into the brussel sprout mixture.  Cook, stirring constantly, for another five or so minutes.

It’s so good you might just change your mind about brussel sprouts!   Happy St. Patrick’s Day!
