I feel sick. But in that good, I ate one too many brownies, sort of way. You heard that right. Me + Brownies. How does someone who is gluten-free OD on brownies you ask? Well, I have the new gluten-free Betty Crocker brownie mix to thank! And boy was it worth it.
I’d heard about the new gluten-free Betty Crocker mixes (they have one for chocolate chip cookies, white cake and chocolate cake, too) that just came out but I hadn’t tried any of them yet. I’ve sorta sworn off baked goods since going gluten-free a year and a half ago when I found out I had celiac diesease. To be honest, most gluten-free baked goods taste like crap-o-la so I never have high hopes.
Betty out did herself.
I doctored them up a little bit – the same way I used to do with regular brownie box mixes. I added one of the apple sauce snack packs and half a bag of semi-sweet chocolate chips. I’ll let you decide – but don’t they look delish??!!
And because I wanted to go completely over the top with my dessert tonight, I decided to bust out some of the 44 lbs of berries I picked a few days ago and make some homemade blackberry ice cream. Can you say heaven?
